There are many variations of this delightful salad. One of my favorite ways to serve it is on whole wheat pita bread. It is great for taking in your lunch; but you have to wrap your pita bread separately until you are ready to eat.
3 cups broccoli florets, cut small
1/2 cup red onion, chopped
1 cup mayonnaise (can be half yogurt)
1/4 cup sugar
2 tsp vinegar
1/2 cup raisins
1/2 cup feta, mozzerella, or cheddar cheese (optional)
Wash broccoli and cut into small florets. Add chopped onions, raisins, and cheese. Mix dressing (mayonnaise, sugar, and vinegar). Add to broccoli mixture.
This salad would really complement your St. Patrick’s Day meal, as well.
