Sweet Potato Muffins

A little gold for your St. Patrick’s Day Feast:

 Mix:  1 cup sweet potatoes, cooked and pureed
1/4 cup vegetable oil
1/4 cup unsweetened applesauce
2 eggs

Beat with electric mixer for 1 minute until well blended.

Stir together:  1/2 cup sugar
1 1/2 cups unbleached white flour
3/4 tsp salt
1 tsp soda
2 tsp cream of tartar
1/4 tsp cinnamon
1/4 tsp nutmeg

Add to sweet potato mixture and stir just until moistened.  Bake in muffin tins at 4ooF for 15 minutes.  Cool on cake rack.
