A nice accompaniment to your St. Patrick’s Day table – and tasty too!
1 small pkg lime jello
1 cup boiling water
1 cup crushed pineapple with juice
1 cup cottage cheese
Mix jello and boiling water. Stir in pineapple. Chill until syrupy – about 1 hour. Fold in cottage cheese. Let set in refrigerator until firm.
Note: This salad tastes good with orange jello, as well. This is a very good recipe for diabetics. Just use sugar-free jello.
