Chicken Orzo Soup

There is nothing more comforting on a cold, damp day than a hot bowl of soup.  And the most wonderful thing about it is that it nourishes the body as well as comforts it.

6 cups chicken broth
1/2 lb. ground chicken
4 crackers, crushed
1/2 tsp italian seasoning or a mixture of thyme and oregano
1 clove garlic
1 onion
1 medium carrot
2 cups spinach, chopped
1/2 cup orzo
1 tblsp olive oil
salt and pepper to taste

Crush crackers and add to ground chicken along with italian seasoning and a dash of salt and pepper.  Make into tiny meatballs and brown in olive oil in large pot.  Add chicken broth, garlic, onion, and carrots.  Bring to a boil and add orzo.  Cook for ten minutes and then add chopped spinach which has been washed well.  Cook for another 10 minutes.  Season to taste.
